COMFORT FOOD:
DELICIOUS RECIPES TO BALANCE OUT YOUR DIET

As beneficial as it is to eat nutritious and healthy meals, some days call for delicious comfort food. A long day of school and commuting is a perfect excuse to ditch the meal preps sitting in your freezer you spent Sunday night preparing, right? Right. Sometimes, eating your favorite comfort food not only serves as a tasty treat to look forward to, after a long day, but can also serve as a reminder that it’s important to balance out your diet by not restricting yourself to eating only “healthy” foods. Moderation is key. Understanding that you can eat whatever you want—as long as it’s in moderation—is important in maintaining a healthy relationship with food. This means that it’s perfectly okay to cook the recipes below and not spend your entire day feeling guilty about it. Hooray!
Oreo Stuffed Chocolate Chip Cookies
What you’ll need:

1 Cup (or 2 sticks) of Softened Butter

3/4 Cup of Packed Light Brown Sugar

1 Cup of Granulated Sugar

2 Large Eggs
-
1 Tablespoon of Vanilla Extract
-
3 1/2 Cups of Flour
-
1 Teaspoon of Salt
-
1 Teaspoon of Baking Soda
-
2 Cups of Semi-Sweet Chocolate Chips
-
1 Package of Oreo Cookies
This recipe makes 24 Cookies
Directions: Combine sugar, butter, vanilla extract, and eggs in a large bowl and mix until smooth. In a separate bowl, mix the flour and baking soda, and then gradually add to previous mixture. Once both mixtures are combined evenly, add semi-sweet chocolate chips to the bowl and mix into dough. Using an ice cream scoop, scoop two balls of dough, and place 1 Oreo cookie between the two balls. Squish the dough together until Oreo is completely covered and place onto cookie sheet. Bake at 450 degrees and enjoy!


Easy Chorizo Cheese Dip
What you’ll need:

2 Cups of Shredded Queso Quesadilla Cheese

½ Package of your favorite Chorizo sausage
-
½ Cup of Milk
-
1 Bag of Tortilla Chips
Directions: On a skillet, cook chorizo on medium heat until fully cooked. In a saucepan, combine the milk and shredded cheese and heat until mixture is fully melted. Pour cheese into a ceramic dish and top with cooked chorizo. Dip with tortilla chips and enjoy.
